Hello and welcome to my blog. So it looks like I missed last week’s week in review. I was off from work so didn’t really do much with food. No smoothie however I did retreat to the usual chicken. This post will be a mixture of last week’s and last two weeks.

This was Mondays lunch. Mix vegetable bulgur and left over lamb

I had this for dinner on two occasion. Oven baked chips, bread chicken and mix vegetable. What you see on the chips is Nando’s perperi salt

This is Wholemeal turkey fajitas. I made this a couple of weeks ago and kept a bit of it in the freezer just so it does go off. Thursday’s lunch

I had a bit more bananas this week as the tangerine and apples were quite difficult to eat. They were not as sweet as previous weeks fruits. 😬

As you can see from my lunch, I am trying to have a variety of meal and this is because I am not a big fan of food so I am trying to have different meals available to encourage myself to eat.

Hello and welcome to my blog, as promised i am coming to you with my blog on my “weekly” smoothie. This time i switch it up a wee bit. I had the usually fruit plus spinach and other powders..

So the ingredients are as follows:

– Spinach

– Strawberries

– Blueberries

– Kiwi

 

– Coconut water

– Cinnamon

– Green Blend of:  Organic matcha, wheatgrass, green tea and spirulina, chlorella

– Maca powder

The making of the smoothie…

I am no stranger to adding vegetables to my smoothies. In the past the majority of the ingresient were vegetable like broccolis spinach. This time round it’ s 4 of 5 a day.

My trolly at a glance. I got a few things such as pop corn, maltesers and other chocolates for my team as its my birthday in a couple of days. 😀😄 

Hello and welcome to my blog. I am coming to you with what is in my grocery trolly. I have been a bit busy in the past weeks but im back now. This was what i bought. I have the usual fruits for my smoothie and other items for my cooking fpe the weeks and coming weeks in addition to my daily staples.

Grocery all laid out. Sometimes i try organic fruit and vegetable just because. It was nearly heading towards £60 so i had to elimite a few things such as chicken sausage and apples as i also had apples and my sausage had not finished.

Fruits are kind of expensive too so i may switch to my vegetable smoothie imstead. I used to do this back in the day. I am not a fun of kale, i prefer spimach so we shall see.

Hello and welcome to my blog. So today’s i was not sure whether to have couscous and salmon or chicken but i guess the chicken won.

The ingredients are:

Beef stock for taste in the couscous

My Lamb Meatball Recipe

These are the entire ingredient for the meal but for the purpose of this blog, I will stick with the recipe for the meatballs and final product of the meal.

Hello and welcome to my blog. As promised this is the recipe for my lamb meatballs I prepared in last weekend. I did not make it using the traditional ingredients. I have seen recipes which includes bread crumps which I have tried before but didn’t like the out come.

You may think why not just buy the meatballs and cook with it instead of putting yourself through all this stress? I like to make things from scratch just so I know what I am adding and how much. This is was one of my main reasons for eating more home cooked meals and eating less outside during my clear skin journey and I did see some improvement.

Using your own discretion in the amount of ingredient you want to use. These are the ingredients I used

 

Ingredients:

  • 500g of mince lamb,
  • Half of red onions
  • Ginger
  • Grounded black pepper,
  • Dried mint
  • Grounded cayenne pepper
  • Extra Virgin Olive oil
  • 1 Knorr lamb Cube

Grate the garlic, onion and ginger and mix well with the a tea spoon of the extra virgin olive oil and spices (Mint, cayenne and black pepper)

Wash the mince lamb to get any blood out and mix it into the mixture.
Mint Lamb Meatballs
You then make small balls depending on how big you want your meatballs to be.

Let this slowly cook in the fan oven but if you cant wait put the heat up for it to cook quicker.

Today’s lunch looks something like this

Hello and welcome to my blog. So this weekend i went all italian with my big main meal for the week. I made lamb meatballs and spaghetti with red, yellow and green bell peppers and Parmigiano-Reggiano cheese. I will share in a later post how i prepared the meatballs, until then enjoy it virtually.

 

Wholegrain Spaghetti with Lamb meatballs

Mince lamb made into meatballs

Hello and welcome to my blog. For today’s blog, i am going to allow you to  take a peek into what’s in my lunch bag.

Breakfast and lunch all packed up

Every morning, i make my breakfast, lunch and other snack and pack them into my lunch bag. It takes me about 30 to 40 minutes.

Today’s lunch is white rice and mediterranean vegetable lamb stew i made at the weekend. In the thermocafe flask i have my sausage, two boiled eggs and baked beans. I warm the bake bean on fire with a touch of grounded cayenne pepper and olive oil. I also have with me my 5 a day smoothie, a banana, a scone with jam and cream. 

Today’s breakfast was greek and natural yogurt, honey, cinnamon and blueberries. I also have two boiled eggs, two sausages and baked beans. I have to eat this way to maintain a UK size 6. The struggle is real.

This way i am aware of whats in my food as i prepared it.

The papaya i saw in asda wasnt riped. I actually wanted to do this smoothie during the week but did’nt have the time to.

Today i am coming to you with yet another smoothie.  I wish i could have a smoothie everyday but we all know fruits tend to be very expensive so once my smoothie finishes i have to wait till my next purchase of fruits for smoothie. Today or should i say this weeks smoothie ingredient is as follows:

Kiwi

Apple

Strawberries

Blueberries

Pineapple

Cinnamon

And coconut water as base

I tend to add cinnamon to almost everything. I have not reason for this i just like the flavour it gives my smoothie. In addition it is high in antioxidant. #Win

Blueberries are known for their high content of antioxidant and thus good for your wellbeing. According to Dr Axe “antioxidants help prevent damage of tissues and cells caused by free radicals, they’re needed to protect against heart disease and stroke.”
